How to save the game?
The Valhalla DLC for God of War Ragnarok has the option to save your progress. To make a save, you need to use a Tablet of Endeavor, which are found in Sanctuary Realms.
How to resume playing from the latest save?
Once a save has been made in Valhalla DLC, you can easily resume playing from the main menu of GoW Ragnarok. You'll be taken to the same Tablet of Endeavor which you've used to save the game.
