On this page of the guide to The Legend of Zelda: Link's Awakening, you will find a short description about the fight with Dodongo Snakes.

Dodongo Snakes always appear in pairs. They are Mini-Bosses you will encounter in Key Cavern, Face Shrine and Turtle Rock. To defeat Dodongo Snakes, feed them with bombs. However, bombs must be placed at the right moment, just before they open their mouths. Each snake requires three bombs to be defeated and will leave behind a Fairy when destroyed. Unlike most Mini-Bosses areas, the Dodongo Snakes area can be exit at any time, so you can always replenish the bomb supply.

In Face Shrine and Turtle Rock, they will return like normal enemies after being defeated. In Turtle Rock, you have to throw bombs at Dodongo Snakes from behind the railing at the top, because that's where the chest will appear after defeating them. After leaving the room, the chest will disappear and you will have to kill them again.
