Weapons

Each weapon has its own tree. - How does Crafting and Upgrading work in Monster Hunter World? - FAQ - Monster Hunter World Game Guide
Each weapon has it's own tree.

When you're paying a visit to the smithy, you can choose the forge equipment tab to go to crafting; then, you need to choose the type of weapon you want to forge. Initially, you'll only be able to have the basic weapons crafted, but in time, you will gain access to more weapons.

When you want to upgrade a weapon, you will be taken to a screen with a rather substantial weapon upgrade tree. The screen is very legible, though. For example, the basic Hunter Knife II can be upgraded to Hunter Knife III or switcher for Aqua Messer I (a water weapon) or Blooming Knife I (poisoning the enemy). These weapons will have new upgrade trees, and so on and so forth.

Choosing your weapon is entirely up to you. You should, however, consider the resilience of the monster you're hunting for and the price of upgrades. If you don't have the materials needed for upgrades, you should look for alternatives and choose another type of a weapon, like a fire hammer, or something. It's your choice, though!

Armor

By Armor Sphere you can upgrade armor. - How does Crafting and Upgrading work in Monster Hunter World? - FAQ - Monster Hunter World Game Guide
By Armor Sphere you can upgrade armor.

When you defeat the given enemy and extract materials from it, you will be able to forge a new armor. The armor will be physically similar to the monster - the tougher the creature was, the better the armor will be. Additionally, some of the armors will feature extra parameters and traits (for example, the Rathalos armor will increase elemental damage of critical hits).

In order to upgrade armors, you will need the Armor Sphere (which mainly can be obtained in the Resource Center). Allocate the points to upgrade the chosen piece of armor. You shouldn't craft a new armor each time; upgrading your favorite one is the better solution.

Also note that you can forge equipment for Palico as well, which can significantly improve the combat abilities of the creature.

Charms

You will unlock special amulets that will enhance your character. Such items can improve your combat abilities, defense or allow you to, for example, perform a jumping attack without breaking the combo. Upgrading these items is identical as the rest of the equipment - you need a certain amount of materials in order to be able to (re)forge the given talisman.
