In The Quarry, it is not possible to skip dialogs or cut-scenes, even if you are watching the same scene again, e.g. it's your another playthrough, or have died and the game loaded a save before the cut-scene/dialogue. The gameplay of The Quarry is based entirely on dialogues with many important choices.
Dialogues, and the relationship between characters
The interactions between characters are influenced by dialogues, choices, items you acquire, and individual facts gained during gameplay. All of this affects the ending you will see.
