On this page of the guide to The Legend of Zelda: Link's Awakening, you will find a short description about the fight with Slime Eel.

Slime Eel is the Main Boss in Catfish's Maw, who guards the Wind Marimba. He spins his tail around continuously from the hole in the middle of the chamber. You must avoid this tail at all costs.

It is best to stand in one of the corners of the chamber and wait for the Eel's head to appear in one of the four holes. Stand in front of his head and quickly use a Hookshot to pull it out. Eal will then slowly return to the hole, so you have to hit his neck with a sword as many times as you can.
