On this page of the Resident Evil 4 Remake game guide you will find information about the Request called Viper Hunter.
These challenges enable you to earn special currency (spinels), with which you can buy rare items - such as a treasure map, laser sight or artifacts. On the other hand, if you do all the orders during one playthrough, you will receive the silver Jack of All Trades trophy.

You will be able to complete the Viper Hunter request over the course of Chapter 3. It involves collecting three Vipers and then selling them to the Merchant. You will find the request sheet next to his post, near the passage to the Town Hall in the village.
Where to find vipers?
Unfortunately, it is impossible to find all the vipers not far from the order itself or even in one location. It will take a while to collect enough of them. Fortunately, the task is active long enough. For this reason, it is better to do them on occasion and combine them with other orders.
The first viper can be found even before the task is undertaken, e.g. in the Village Square. The snake is perched in one of the crates in the room hiding behind the closed door to the city hall (you need Insignia Key to open it) next to the tower, which is demolished in this chapter.
To reach the place with the second viper,you have to pass the closed church and get to a bridge suspended over a deep precipice. You will do this by jumping into the hole located under the cover in the nave above the right of the main door of the church.
When you get to the mentioned bridge you will be attacked by a group of opponents. After dealing with them, you will be able to enter a small building to smash a box with a viper inside in peace.
The largest number of vipers is a little further away, behind a location called Quarry. You will eventually end up at Fish Farm - a location where you will find fuel for the motorboat. Now all you have to do is look out for vipers floating in the water (although they also come out on wooden structures). However, it is better to first deal with the enemies that appear here in rather large numbers.
Once you have all three vipers, go to the nearest Merchant and sell them to him. You will earn at least 3,000 pesetas for it.
Reward
You will receive four spinels as a reward for completing the request.
