Location
Copper is the new ore you'll find beneath the surface of the earth. You can usually find it in the area of grid 50, underground.
Copper ore
You'll get the copper by digging up the blocks. 3 to 5 ores will fall from a single block. However, you can use the spell of luck to get up to 16 ores from one block.
However, you can use the pickaxe with the Silk Touch enchantment to get the copper ingots.
Usage
From copper you will create a lightning rod - made of 3 copper ingots, from top to bottom (as in the screenshot above).
The second thing that you can create is a telescope - you will create it from 2 copper ingots and 1 amethyst crystal (as in the screenshot above).
