In the NPC villages, you can barter with Villagers for the prices defined by them. The looks of individual villages differs from biome to another. Bartering is based, mainly, on the monetary unit of the emerald. Villagers accept emeralds from you, in exchange for their merchandise. The amount of items that they are willing to offer changes, e.g. a Villager may offer 3 loaves of bread, for an emerald, but on the other time, he may offer you 4. You can also sell some of the items for emeralds. Each Villager has a different bartering offer for you, depending on the factor of randomness and occupation of that villager.
To barter, you need to find a Villager and select him with the action/use button, after which the interface will open. In the window, you will see the offer that the villager makes. Now you can accept the transaction or reject it. You cannot reverse it so, you need to be sure of your choice. You can only barter with adults.
NPC Villages spawn at random locations throughout the game world, in random biomes and they differ in size. In the bigger villages, the villagers are protected by the Iron Golem. Killing a villager will not allow you to collect the items that he had on sale, nor the ones that you exchanged with him. If there are, not more than, two villagers in a village, then this village will not develop. A village can be obliterated after a Zombie attack, who will turn all of the Villagers into Zombie Villager.
