To answer your question, in Hogwarts Legacy spiders appear in a large variety - both small as well as huge monsters that sometimes are bigger than the controlled hero.
The first mandatory encounter with spiders takes place in Jackdaw's Tomb - this is a location involved in the main storyline and unfortunately, you cannot skip these confrontations.
The game doesn't offer any option to hide or skip spider encounters, but in case of free exploration, you can avoid single creatures and larger spider lairs.
