Here is a list of the most important things that aren't lost after death and which can be carried over to subsequent attempts:

1) Talents from the Mirror of Night - this is the main category related to transferring permanent progress in the game. Talents guarantee a variety of skills and stat bonuses. They can, for example, let you respawn after death, lengthen the health bar, allow you to use more bloodstones or increase the strength of selected types of attacks.

You need to use Darkness to buy talents. It is worth noting that the game allows you to level up your talents, reset the purchased talents (you pay for this with 1 chthonic key) and exchange active talents for others.

8) The Codex - its entries are never reset. The Codex expands throughout the game with completely new entries, as well as updates to current entries. The latter may require e.g. meeting an NPC a specific number of times or killing a specific number of enemies with a particular weapon. Statistics for all playthroughs are counted.

9) important moments in the story - The game remembers various advancement actions, e.g. that you dealt with a given boss, that a specific enemy defeated you or that you met Chaos. This can affect e.g. the course of conversations with various NPCs. However, don't think that if you defeated a boss once, you won't have to do it again. There will be further confrontations, either with the boss themselves or a slightly different "variety".
