This page of the Elden Ring game guide explains whether changing the time of day by passing time has any significant uses.

What's more, depending on which time of day you select, you can encounter completely different opponents - Elden Ring: Time of day - is it important? - FAQ - Elden Ring Guide

What's more, depending on which time of day you select, you can encounter completely different opponents. For example, if you choose to travel at nighttime, you will encounter a unique opponent on the bridge in Limgrave, a mini-boss called the Night's Cavalry. The boss will only appear at this particular timeframe and you will be unable to fight them during the day.

It's worth experimenting with the time of the day, as this will allow you to encounter new opponents and new rewards. It will also help you learn how it affects the behavior of certain types of enemies.
